Sauté for a further 4-5 minutes and take it off the heat.
Transfer it to a bowl. Add lemon juice.
Further mix in the reserved onions, tomatoes, green chilies, and cilantro.

Finally, drizzle the tamarind chutney and toss until all the ingredients are well blended.
Sprinkle with thin sev and crushed papdis.
Serve immediately and enjoy.
Can this Chaat be made a day in advance?
Corn Masala Chaat comes together in minutes; therefore, I recommend preparing it fresh. But you sure can if you prefer to make it a day in advance.
I would opt out of adding lime juice, sev, papadis, and spices to the chaat and add it on the serving day.
How long does Corn Chaat stay good?
This chaat stays in an airtight container in the refrigerator for a day . After that, the added salt will release its water, and the chaat will lose its texture as the veggies will become all mushy and watery.
