Transfer apricot, walnuts, raisins, almonds, flaxseeds, coconut, and cinnamon powder to a food processor.
Pulse a couple of times to combine.
Add vanilla essence and mix until blended.
Roll the “apricot dough” into balls. Enjoy them as is or dust the energy bites with desiccated coconut.
