No Cook Apricot Energy Bites

Amazingly delicious no cook apricot energy bites is gluten-free and vegan. A perfect sugar-free snack made with flax seeds, healthy nuts and desiccated coconut!

Instructions

  • Transfer apricot, walnuts, raisins, almonds, flaxseeds, coconut, and cinnamon powder to a food processor. 
  • Pulse a couple of times to combine.
  • Add vanilla essence and mix until blended.
  • Roll the “apricot dough” into balls. Enjoy them as is or dust the energy bites with desiccated coconut.

Now for some quick tips and variations
 
» Once prepared, these no-cook apricot bites will store well in the fridge for two weeks and 1 month in the freezer.
» Please use a food processor for best results. 
» If the pulsed mixture feels sticky, add an extra teaspoon of coconut. Coconut will absorb the moisture and take care of the sticky dough. 
» Allergic to almonds? Try cashews instead. 
» No-cook energy bites won't bind? No worries, add a tablespoon of maple syrup or any nut butter, and that should do the trick. 
» Feel free to leave raisins out if you prefer moderately sweet bites.
» For extra protein, add a scoop of your favorite vegan protein powder after pulsing the ingredients. 
» Vanilla essence can be substituted with almond extract.
» I have not added sugar to these energy balls, as they are naturally sweet. But feel free to add 1-2 teaspoons of honey/sugar and adjust to taste.
