  • Rinse the mangos under tap water. Gently rub them with your hands to remove any debris or deposits. Set aside. Add 1.5 cups of water to the Instant Pot insert. Add the rinsed mangoes to the insert. 
    Place the lid on the Instant Pot. Seal and secure. Press the ‘Pressure cook button’ and cook on high pressure for 10 minutes. Make sure the venting knob is in the sealing position.
    Allow the pressure to release naturally. Once the pin drops, carefully open the Instant Pot. After the mangoes are boiled, they will lose their vibrant, rich green color and become soft and pulpy.
  • Remove the mangoes from the boiled water and immerse them in ice-cold water to stop the cooking process altogether.
    Once the mangoes are comfortable to touch, peel the outer skin of the mangoes.
    Use a spoon to scoop out the pulp from the boiled mangoes. Scrape off the seed and extract all the pulp.
  • Transfer the cooled pulp to a blender. Add jaggery. Blend until smooth. Pour in 4.5 cups of water and blend until thoroughly combined. 
  • Pass the pureed aam ka Panna through a fine-mesh strainer. Strain through the strainer, pressing to extract all the mango liquid into the bowl. Discard the mango fibers. 
    Add fresh mint leaves to a blender. Pour in 1/2 cup of water and blend until smooth. 
    Pass the mint puree through a fine-mesh strainer into the previously strained aam ka Panna. Discard the leftovers. 
  • Time to add a delightful combination of spices. Add rock salt, black pepper, and roasted cumin seeds to the pureed aam ka Panna.
    Mix until thoroughly combined. Seal the container and transfer it to the fridge to chill. 
    Tip — After preparing the base mixture, refrigerate it for a few hours to allow the flavors to meld together.
  • When you're ready to serve, pour the Aam Panna over ice cubes and garnish with a sprig of mint or a lemon slice for added freshness.

Can I boil mangoes in the traditional pressure cooker?
Absolutely, you can! You can boil the mangoes for this drink in many different ways -
  • You can boil them in an open pan over a stovetop. The rest of the recipe instructions remain the same.
  • Another way is to pressure cook the mangoes for 2-3 whistles until soft and tender. This is a quicker way to boil the raw mangoes.
  • Alternatively, you can microwave the mangoes too. Place the large mangoes in a microwavable bowl and fill it with water. Microwave them on HIGH for about 10-12 minutes or until soft. Finally, peel the mangoes and follow the recipe as instructed. 
  • For medium-sized mangoes, micro on HIGH for 6-7 minutes or until soft.
 
What can I use instead of jaggery?
Using jaggery makes a healthier version of this lip-smacking recipe. I have used crushed/ powdered jaggery as it blends easily when pulsed with the Panna and forms a homogeneous mixture that is smooth and creamy.
But you can swap the jaggery with sugar if you want.
Another healthier way to sweeten your Aam ka Panna is to add dates for jaggery. Soak ¾ cup of dates in water for about 40 minutes. After resting time, discard the water and transfer the dates to the blender.
Blend until smooth and pass through a fine mesh strainer to obtain a smooth mixture that can be added to the concentrate of Aam Panna.
 
Should I peel the mangoes to make Aam ka Panna?
The choice is entirely up to you! I prefer boiling the mangoes with the skin on. This ensures - 
  • The juicy pulp is intact, and
  • The skin adds a little extra flavor too.
There is no right or wrong way to make this luscious drink. Some of you may prefer peeling the mangoes, which is perfectly fine.
Choose whatever option appeals to you the most. If in haste, peel and chop the fruit and then boil it in water. Either way, Aam ka Panna will taste amazing!
