PUMPKIN RANCH DRESSING
- 8 ounces Softened Cream Cheese
- ¾ cup Sour Cream
- ¾ cup Pumpkin puree
- 3 tablespoons Buttermilk add more to adjust consistency
- 1 teaspoon Lemon Juice
- 2 tablespoons Dry Ranch dressing mix
- 1 teaspoon Chopped cilantro leaves
- ½ teaspoon Garlic Salt
- ¼ teaspoon Black Pepper powder
- - - Salt to taste
ASSEMBLING PINWHEELS
- 4 - Spinach and plain flour tortillas (2 of each)
- 1 cup Finely-chopped green bell peppers
- ¾ cup Finely chopped red onions
- 1 cup Finely shredded cheese
- ¾ cup Finely chopped Carrots
FOR PUMPKIN RANCH DIP
Assemble: all the ingredients listed under - 'Pumpkin Ranch Dressing' in a large mixing bowl.
Whisk until well blended.Tip — If using fresh pumpkin puree, blend all the ingredients in the blender. Then you have the best creamiest Pumpkin Ranch Dip ever! Take a warm tortilla and spread the mixture thinly and evenly over each tortilla. Make sure you cover the edges, too, as this will help the ends to stick together. Top it with a rainbow of thinly diced veggies.
Once your mixture is evenly spread, tightly roll each tortilla up jelly-roll style or like a log, and cover each tortilla roll in a plastic wrap.
You want to make sure the roll is very tight. It will lose its desired shape and fall apart if it’s too loose.
Chill in the refrigerator for 3-4 hours or overnight.
When you’re ready to serve them, use a serrated knife to slice the tortilla roll into 1-inch rounds, and arrange them on a serving plate.
