I used Costco apricots, so the color was a lot darker. For those who think the texture is dry, I’d recommend to continue pulsing the food processor – eventually the nuts and flax seeds release oil, which helps the balls bind. I think with some cardamom, this would make a good modak stuffing as well. Thanks for a great recipe!
