Who doesn’t love a pasta night? I mean, it’s one of the most loved meals on the dinner table and everyone’s favorite! Plus, it’s easy to make, absolutely delicious to eat and loved universally by all.

Personally, I try my best to include pasta in the meal plan in some form. Whether penne, spirals, or fettuccine, pasta is one of the easiest 30-minute meals out there.

At my house, pasta brings peace to a usual complaint that fills the world – ‘what’s for dinner?’ As soon as my kids get a whiff of the pasta wafting through the house, they quietly and quickly come to the dinner table and savor their meal in contentment.

So, if you want to keep your mealtime a quiet affair and have limited time on hand, a pasta dinner is a perfect option!

HOW TO MAKE Cajun Chicken With Creamy Avocado Pasta?

This recipe has everything you need to create a healthy meal-

Homemade Avocado sauce – Are you an avocado lover than you will love this sauce. Like a lot of fruits and veggies, avocados have amazing health benefits. They contain a good amount of fiber and are an excellent source of monounsaturated fats and vitamin E. Therefore, I decided to coat my pasta in a homemade avocado sauce that is super creamy, light and healthy dressing. For the sauce, combine all the ingredients in a food processor or blender and pulse until smooth and creamy.

Spiral pasta – With only three plant-based ingredients, this pasta makes your meal more nutritious. Cook the spiral pasta until al dente in salty boiling water. Drain and toss the cooked spiral pasta in avocado sauce and you are all set. I love the way this sauce lightly coats each and every bite of pasta and takes it to a whole new level.

Corn and Cherry Tomatoes – To make my pasta a little more nutritious I chose to add cherry tomatoes and corn to it. These two gave this dish a nice bite and an incredible flavor and texture.

Baked Chicken – Rub the chicken breasts with spicy cajun seasoning then bake until they are tender and juicy. Cajun chicken adds a nice smoky flavor to this meal.

Combine all of them together and there you have it a full-fledged meal created with minimal effort and in no time at all.

Can I make it vegetarian?

Of course, you can! Skip the chicken all together and replace it with cajun flavored grilled tofu or chickpeas and you are all good. A gluten-free, vegan and dairy free meal is ready to dive in.

Can it be made ahead of time?

Absolutely!

What I love about this dinner is that you can make the avocado sauce and chicken ahead of time and store it in the fridge. Grilled chicken and avocado sauce stays good for 2 -3 days in the fridge. When you are ready to cook dinner, boil the pasta as per package instructions, drain and add corn and tomatoes. Toss in the sauce, top with reheated grilled chicken and serve.

I have leftovers, so can I freeze Cajun Chicken With Creamy Avocado Pasta?

I prefer to eat this pasta right away as it tastes better when freshly made. But if you have leftovers then it needs to be stored in the refrigerator in an airtight container. It will still taste great the next day.

Before reheating, add a few tablespoons of water and mix it well. Reheat in the microwave for 30 seconds and enjoy! And if you are expecting some guests then double the ingredients and have fun!

INGREDIENTS 

AVOCADO SAUCE – MAKES 3/4 CUP SAUCE

  • 3 medium sized Avocados, peeled and pitted
  • 1/2 cup Cilantro Leaves
  • 2 cloves of Garlic
  • 3 tablespoons Lemon Juice
  • 1/4 cup Soaked Cashews
  • 1/4 cup Avocado Oil
  • 1/4 cup Vegan Milk
  • Salt And Pepper to Taste

CAJUN CHICKEN INGREDIENTS

ASSEMBLING PASTA

  • 1 lb Spiral pasta
  • 3/4 cup Cherry Tomatoes, sliced
  • 3/4 cup Canned Corn kernels, drained and washed
  • 2 tablespoons Oil
  • Salt And Pepper to Taste

GARNISH

  • Chopped Cilantro Leaves

INSTRUCTIONS

AVOCADO SAUCE

  • To make the avocado sauce, all you have to do is blend all the ingredients listed under ‘avocado sauce’ in a blender or a food processor until it reaches a smooth consistency.
  • Add an extra tablespoon of milk, if the sauce is too thick. Set it aside. 

CHICKEN PREPARATIONS

  • Assemble: all the spices for chicken. Mix to combine. 
  • Wash and clean chicken breasts. Rub this Cajun spice mix over the chicken until chicken is well covered in the spice mix.
  • Bake the chicken in a preheated oven (350 degrees F) for 20 minutes or until done. I have cooked chicken in an airfryer – 350 degrees F for 15 minutes.  Turn the chicken and cook again for 5 minutes. 

PASTA PREPARATION AND ASSEMBLING

  • Meanwhile, let's start with the pasta. Boil Spiral pasta as per package instructions. Once done, drain the pasta. 
  • Transfer it to a bowl. 
  • Sprinkle pasta with salt and pepper. 
  • Toss to combine. 
  • Add corn kernels. 
  • Add sliced Cherry Tomatoes.
  • Time to add the avocado sauce.
  • Pour a generous amount of sauce over the pasta. I recommend adding the drained pasta and veggies instantly to the sauce, otherwise, it will not coat well.
  • Toss to combine. 
  • Time to check on the chicken – perfectly baked chicken breasts. 
  • Transfer tossed pasta to a serving bowl.
  • Top with grilled Cajun Chicken, cilantro leaves and enjoy!

Versatile Recipe!
I love the versatility of pasta and there are many healthy ways to cook it. Below are a few of my favorite combinations.  
Try substituting tomatoes with –
  • grilled zucchini or 
  • roasted broccoli or 
  • asparagus or
  • grilled corn
Trust me, each one of the above makes the dish tasty and nutritious.
Not an avocado lover, no worries! Substitute avocados with –
  • leafy greens
  • chickpeas or
