You can use brown sugar in place of white sugar in a pickle recipe at a 1:1 ratio. However, be aware that brown sugar will slightly darken the color of your pickles because of its molasses content. It may also add a richer and more complex flavor to the pickle. If you prefer a milder taste, it is better to use white sugar for pickling.

Thanks for teaching us how to make Gajar Gobhi Shalgam Achar. It looks so appetizing and delicious. I love the flavors of Indian foods. I like how ALL the vegetable dishes are so tasty. I had never heard of this but look forward to trying it. Is it spicy? If so, is there a way to make it non spicy. I can’t wait to try this my mouth is watering, lol! Thanks for sharing.
