Summer screams for cold beverages, and what could be better than a Non-alcoholic Dark Chocolate Coconut Cooler made with five simple ingredients. It's the perfect drink to quench the thirst on a hot sunny day. This chilled cooler is unbelievably rich, creamy, and no one can guess it's vegan, dairy-free and kid-friendly too!

Start by adding coconut milk, unsweetened desiccated coconut, and coconut extract to a blender.
Blend until smooth.
Add rest of the ingredients (dairy-free chocolate ice cream and melted chocolate). Blend until thick and smooth.
Based on the thickness you prefer in your cooler, you can play with the amount of ice cream. I like it thick, therefore, have added 1.25 cups of ice cream. Feel free to add three tablespoons to 1/4 cup of dairy-free milk to dilute the cooler.
Once everything is well blended, pour in tall glasses, and garnish the way you like.
I have garnished the cooler with whipped cream topping and chocolate drizzle. Finally, I finished it off with some toasted coconut flakes and fresh mint leaves.
