Asian Chicken Lettuce Wraps

Ingredients

  • 1 tablespoon Olive Oil
  • 1 lb Ground Chicken
  • 1 tablespoon Minced Garlic
  • 1 tablespoon Minced Ginger
  • - - Salt to taste
  • ¾ teaspoon Black Pepper
  • 8 oz Mushrooms finely chopped or you can use water chestnuts (8 oz can)
  • 1 small Red Bell pepper finely chopped
  • 1 large head of Bibb Lettuce

Instructions

PREPARE SAUCE

  • Combine Hoisin sauce, soy sauce, Sriracha, rice vinegar, sesame oil, and brown sugar in a bowl.
  • Whisk all ingredients together until thoroughly mixed. Set it aside.

MAKE GROUND CHICKEN

  • Heat oil in a pan.
  • Add ginger-garlic and sauté for a minute over low heat.
  • Add the ground meat and cook over low heat.
  • Break the chicken with a spoon.
  • Brown the chicken over low heat or cook until no longer pink for about 5-7 minutes.
  • Add mushrooms and the sauce mix.
  • Mix until thoroughly combined.
  • Add bell peppers.
  • Add spring onions. Do the taste test and if needed, add salt accordingly.
  • Toss all the ingredients and set the chicken aside to cool.

ASSEMBLE LETTUCE WRAPS

  • Wash the lettuce leaves a couple of times under cold water to remove any dirt or debris. Now tear or cut off the whole leaves from the bib lettuce, pat them dry, and spread them on a plate.
  • Spoon chicken filling into lettuce wraps.
  • Garnish with peanuts, spring onions, and black sesame seeds. Serve immediately.
